Finding his passion for gastronomy in Italy and later perfecting his craft in Norway, Federico is now bringing his sensory experiences to the heart of Milan with ‘Sensorium’. Born and raised in Milan, working alongside the likes of ‘The Chocolate King’ Ernst Knam & later touching through the renowned ‘Villa Crespi Hotel’ with the Michelin Star Celebrity Chef ‘Antonino Cannavacciuolo’.
He covered responsibilities across many Italian Award-Winning hotels, such as the Palazzo Parigi, Hotel Gallia and Château Monfort. In 2017, Federico began to expand his culinary repertoire in Norway, where he featured at both the Lysebu & the Bristol hotels in Oslo. This is where he became fascinated with precise details & intricate techniques that he would later adopt in his creative expression.
Federico’s ‘Sensorium Experience’ is a celebration of his passion, abandoning traditional conventions of sweet or savory, nor a pre-established sequence of courses.
