Federico Rottigni, the beating heart of Sensorium, is the vate maestro of sensory cooking. His career began in Italy, where he collaborated with some of the most famous chefs, including Ernst Knam and Antonino Cannavacciuolo. Federico then perfected his art in Norway, where he experimented with advanced techniques and innovations, developing his thinking that defines his creations today.

THE PASSION

Federico’s Dining Experience is a celebration of passion, of abandoning conventions, of inner renewal.
Inspired by the unusual details of everyday life, he transforms these details into a sharable path, in terms of emotions, declining a story that can on the one hand thrill and on the other transfer what he feels deep inside.

THE RESEARCH

At the core remains the centrality of man, the coherence between nature and spirit. Research is therefore an integral part of this narrative. Discovering products that are strongly linked to the man who produces them, and to his story.

Each dish thus represents an important piece of what the story in its entirety is meant to express.
Like a shaman Chef Rottigni lets that story come to life, transforming that emotion or information, using taste, through both the solid and liquid parts, in a flow that is not always obvious.
