- How It WorksSensorium’s dining experiences are an immersive, multisensory journey; they serve as dinner, but act as an artistic, sensory and interactive performance. Guests are seated at a large counter of only 11 seats and share a mystical space and a journey in and out of themselves for two hours.The cuisine is creative in style and without rules. The raw materials are excellent, rare and sought after. The service is like a dance, almost a ritual, but one that leaves out rigid formalities, in which every gesture has meaning. Participation is choral and therefore, as in a theater, the performance starts on time at the same time for everyone, which is why entry is in a 20-minute slot.Leave aside prejudices and everything you know about a “traditional” restaurant.Sensorium is an experience that is lived, not told.
